Lately I have been enjoying the best pancakes I have ever had, complements of my brother-in-law Gil. He has mastered the best Blueberry pecan pancakes in this world. Recently he let me apprentice and shared his recipe with me. Thanks Gil!
1/2 Cup melted butter, then cool
4 Cups flour
2 tsp. salt
2 tsp. baking soda
Mix dry ingredients together in a bowl
5 large eggs gently beaten with a fork
4 cups buttermilk
1 T. almond extract (optional)
Mix together
Add the dry ingredients into the wet, mixing with a fork. Do not over mix. Should be lightly lumpy. Now add the cooled butter and once again mix in with a fork.
If you would like to add blueberries and chopped pecans add them in now.
Cook on a hot griddle until golden brown. Serve with maple syrup and butter! Enjoy!
